I purchased this cross stitched recipe for Mountain Biscuits on one of my junk store visits.
My husband loves my Mom's homemade "cat head" biscuits and adapted the recipe to mimick my Mom's biscuits. We changed the name from Mountain Biscuits to Hill County Biscuits.
4 cups self rising flour
1 teaspoon salt
2 teaspoons baking powder
2
1/4 cups milk
Mix dry ingredients then add milk. Let mixture sit for 5
minutes before rolling into biscuits. Heat black iron skillet before placing
biscuits. Melt 1 tablespoon bacon grease in black skillet. Grease hands with
bacon grease to keep the batter from sticking to your hands. Place rolled
biscuits in skillet with sides touching. Bake at 425 degrees for 20 minutes
until golden brown.
